Here are some tips
Don't forget Alchemy specialisations: let an elixir master make your elixirs and the potion master will take care of your potion-oriented needs. Don't waste those valuable procs please, save yourself some money, so you can repair after the raid and have some spare cash to buy much needed mats for the next raid.

All Classes:

* Mana and Healing Potions! Try to have about 5 of each, experience will tell you how many you use during the whole raid, so adapt to your own needs.
* Bandages! If you haven't levelled your first aid to 375 yet, then get going! They might save your life and cut the healers some slack in difficult situations.

Tanks:

* Food buff: you'll want to use any food that gives you stamina (Protection warrior) or alternatively (mostly for Bear form Druids) agility, for the added dodge %.
* Guardian Elixir: Elixir of Major Defense, or Elixir of Ironskin (only if your resilience gear does not cover 5% crits yet. all pve mobs have a 5% crit chance) or even Earthen Elixir. Another great one is Elixir of Fortitude, with a free health regen ;-).
Flask of the Titans or Flask of Fortification is also a very good option, but in view of the mats, i don't recommend using these on "normal" raids.
* Battle Elixir: I recommend Elixir of Major Agility, though Elixir of Major Strength is an acceptable substitute (definately for protection warriors, as strength modifies the amount of damage absorbed through your shield).
* Don't forget to use sharpening stones or weight stones on your weapons (Warriors)
* Use Rune of Absorption and whatnot on chest and/or shield.
* Potions: Inane Strenght Potion, Heroic Potion, Ironshield Potion

Healers:

* Food buff: Some cooked fish will give you a +healing or a +mana regen.
* Weapons buffs: Brilliant mana oil and the like, pick one that suits your needs. There's one for mana regen, and the other one gives bonus damage and healing. Personally, I'd pick the first.
* Guardian Elixir: Elixir of Mageblood, Elixir of Draeneic Wisdom
* Battle Elixir: Elixir of Healing Power is to be preferred over Adepts Elixir. You want your heals to count instead of praying your heal goes critical when it needs to (which normally it does not).

Casters:

* Guardian Elixir: Elixir of Mageblood, Elixir of Empowerment, Elixir of Draeneic Wisdom
* Battle Elixir: Elixir of Firepower, Arcane Elixir, Elixir of Major Shadow Power, Elixir of Major Frost Power
* Food Buff: +Intellect, +Spelldamage or +Mana regen is what you're looking for.
* Weapon Oils: again, use those which suit you best.
* Potions: Haste Potion, Destruction Potion

Other DPS:

* Buffs will vary a bit, depending on your class, but the general rules apply to them all.
* Melee: Use poisons (rogues) and Sharpening Stones or Weight Stones (Enhancement Shamans, DPS Warriors).
* Food Buff: You'll most likely be looking for Agility or Strenght buffs here, though it won't hurt to take a Stamina buff if you're going to get cleaved or aoe'ed upon.
* Guardian Elixir: Elixir of Fortitude wouldn't go amiss here.
* Battle Elixir: Elixir of Mastery (mainly for shamans), Elixir of Major Agility, Elixir of Major Strength, Onslaught (or Fell Strenght if you can spare 10 stamina) Elixir,
* Special Potions: Here's where the burst dps stuff comes in. In times where the healers are running oom and your boss looks like he's going down, you can pop some special potions that might just turn a near kill into a definate kill. Just don't forget to keep an eye on KTM!
Some of these potions are: Inane Strength Potion, Fel Regeneration Potion (save the healer some mana, better than a healing pot, even though you get a debuff), Heroic Potion, Haste Potion
